Timing is essential when cooking but it’s also great when you are responding to visitors call out for some help. Yesterday, I received an email from Chris asking for some advise & encouragement he could give his wife, Patty, before she starts culinary arts school at The Orlando Culinary Academy this October.

Patty is nervous because she is starting culinaryschool at 45 years young. She is concerned about her age and if she has the necessary skills. A couple of hours after I received Chris’s email, I received an email from Chef Jenni Field, a graduate of The Orlando Culinary Academy who started school at age 40. Perfect timing!

What Is Culinary School

Culinary school refers to formal higher education that prepares people to work as professional cooks and in the hospitality industry. However, culinary school can describe very different academic experiences and training programs. Most culinary schools offer either culinary arts or baking and pastry arts tracks, of which students commit to one. Here are common courses of study all referred to as culinary school:

  • Culinary arts certificate programs: Many culinary schools last between six months and a year and focus only on cooking skills and practices. Attendees finish with a certificate or diploma in culinary or baking in pastry arts.

  • Associate degree programs: Some culinary schools offer associate degree programs in culinary or baking and pastry arts that allow students to further develop their cooking skills while studying basic business subjects. These programs usually last less than two years.

  • Bachelor’s degree programs: Bachelor’s degree programs normally take four years to complete and allow students to major in areas of study such as food business management, hospitality management or food science. Additional academic requirements might involve foreign languages or science and math courses.

Some culinary schools have dedicated campuses where students study and live. Certificate programs typically don’t offer housing but might help students find places to live in the area.

Unless you happen to snag a job at one of the better restaurant groups out there, youre probably going to make an hourly wage between $7-11/hr for an entry level job that involves a lot of peeling and cleaning produce.

Dont get me wrong, I know you have to pay your dues in this industry. And a blue collar job that you enjoy isnt a bad thing. But when you also have to pay your bills and steep loans, well that sucks.

Are You Eligible For Culinary School

Different schools will have slightly different eligibility requirements. At Auguste Escoffier School of Culinary Arts, all incoming students must meet the following criteria in order to be admitted:

  • Be at least 16 years old
  • Have a high school diploma, GED, or international equivalent
  • Complete an application and pay an application fee.
  • Submit an enrollment agreement and Family Educational Rights and Privacy Act Release form
  • Complete an admissions interview

The final three tasks are completed as part of your application process. So as long as youre 16 or older and have a high school diploma or equivalent, youre eligible to apply!

I’m often asked by aspiring career-changers, food entrepreneurs, and young foodies if going to culinary school is “worth it”. This is an interesting question, so I’ve spent some time writing a overview of my thoughts on the matter. There’s been more and more literature on this topic as the world of food become more and more “cool” and celebrity chefs take over mass media – all the while the average cook works 14 days and gets paid $10/hour. Before I get into the thick of it, here’s a quick synopsis on what some the major media outlets have already said:

Eater: Not really. It’s awesome if someone else pays or you’re a trust fund baby, but you’ll have a hard time making the money back in restaurant kitchens and you can learn the skills simply working if you have the right mental attitude.

Eater Round 2: No. Top-tier culinary schools are expensive and salary increases with career progression in restaurants is pathetically flat.

Eater Round 3: There are pros and cons. It’s a good way to transition into the food world and form your foundations of knowledge in a structured, non-stressful environment but the debt is crushing – perhaps you should consider some alternatives?

Lucky Peach: It depends, but generally speaking chefs do not care or hire based on culinary school, nor do they associate graduating from one to be correlated with better work ethic or ability.

Culinary schools sometimes have limited space. Admissions officers at these schools sometimes really do want to be sure that you know what you’re getting into. That means having some sort of food experience. It could be a certain number of months working in a restaurant, an immediate-family history of culinary immersion , your own home baking business, or some other indication that you are passionate about the food world and really do want to be in culinary school.

The idea behind this requirement is that people who have already been in the food industry for a while know what they’re in for, and they have shown that they want to stay in the field. But again, this is a requirement only at some schools, not all.

When it comes to the perks of food industry careers, you cannot overlook free or discounted food. Every restaurant has a different policy, but it is common to receive a free or discounted meal during or at the end of your shift. Some restaurants even offer employee discounts when you are off-shift so that you can enjoy the menu as a customer but pay a discounted rate. Many restaurants allow employees to take home leftovers from the kitchen at the end of the day rather than throwing them into the garbage. If you are the type of person who eats out frequently, then this benefit can actually save you a considerable amount of money over the course of a year.
